| dc.description.abstract | The waste streams from the pineapple canning industry are a valuable source of carbohydrates, in particular dietary fibre (DF) and neutral sugars. In addition, the waste is a suitable source of antioxidants, enzymes such as bromelin and flavours. Since this waste (core and peel) is currently sold at minimal cost to cattle farmers for use as cattle feed or compost, alternative uses of the material with commercial potential was investigated. | en_ZA |
